Our commitment to quality really shines in our products such as our Wild Mushroom and Fresh Herb Ravioli. We start with Baby Portabella and Italian Porcini mushrooms, sauté them quickly with fresh rosemary, thyme and garlic, and blend with freshly grated Asiago and Parmesan cheeses. We then wrap the tasty filling in tender sheets of golden pasta made from Durum Wheat grown in Montana and North Dakota.
Local Tennessee farms provide us with cured meats, fresh cheeses and seasonal produce to create tasty products such as our Benton’s Smokey Mountain Bacon and Onion Ravioli with Tennessee White Cheddar. Ashley Farms provides the all-natural chicken for our Ashley Farms Chicken and Sundried Tomato Ravioli with Feta Cheese and Fresh Basil. These are just a few of our large selection of delicious ravioli, and we work closely with local vendors to create new and delicious recipes.
High quality fresh pasta has a relatively short shelf life. Pasteurization and preservatives are commonly used in the industry to preserve pasta and prolong shelf life. But pasteurization destroys the texture of the pasta, and who wants preservatives in their food? Our unique flash freezing and packaging process locks in the freshness and taste, and our pasta retains the rough hand-made texture that our customers have come to expect. Our pasta tastes like you made it in your own kitchen!
Our manufacturing facility is USDA, FDA and HACCP approved and we follow the Good Manufacturing Practices as outlined by the FDA. We use the latest technology in Italian made pasta machines, and our batches are small to keep consistency and quality high.
